This grinding is done with a set of millstones, the bottom stone fixed, the top one rotating (at about 90 rpm), the slight gap between the stones allowing the entry of wheat between the stones. The grain is fed from a hopper into a "shoe", a wooden trough that controls the flow of grain into the hole in the centre of the runner (top) stone.
